How can you ruin a piece of meat that bad???

My Uncle George was a big part of my young years growing up.  He would frequently be at our house for Sunday dinner or we would be at the farm so mom could help him out with the housework while grandma and grandpa were in Florida.

The first time grandpa had a heart attack in Florida and mom went down to help grandma, Deb and I were staying home with dad.  To keep up our routine, dad decided Uncle George should come for Sunday dinner and our dad would cook.  He went out and bought smoked pork chops (a real treat for us) and proceeded to cook them.....  with a lot of salt and pepper.  Our normally quiet Uncle George, after one big forkfull of super salty pork, lamented "How can you ruin a perfectly good cut of meat!  Fred, what did you do?"  

Now I understand better why he was so affronted!  An Executive Chef would never salt smoked pork chops!

I will miss him very much.  Love you Jane, Kim, Karen, Mike and Dan!
